If you enjoy the nutty flavour of almonds, then you’ll love this simple cake. It makes eight delicious slices, so you’ll have one for every day of the week – and one for an extra treat.

Ingredients
- 3/4 cups of butter
- 1 1/2 cups of sugar
- 2 eggs
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 1/2 teaspoon almond extract
- 1 1/2 cups of flour
Topping
- 1 tablespoon sugar
- 3/4 cup of sliced almonds
Method
Preheat the oven to 180°C degrees. In a small bowl melt the butter in a microwave and then stir in the sugar. Add the eggs and stir until you get a creamy consistency. Add the salt, vanilla, almond extract and flour then mix together. Grease the bottom and sides of a 22cm pan, and pour the batter into the pan. Spread the almonds over the top and add a sprinkling of sugar. Bake for 40 minutes and allow to cool before eating.
