Almond Crusted Salmon

Our Almond Crusted Salmon gives you a good dose of protein and healthy oils. Serve it with Baked Sweet Potato and some greens for a delicious energy dinner.

Serves: Four

Time: 30 minutes

Ingredients

  • 1 tablespoon olive oil
  • 4 salmon fillets
  • 4 tablespoons sliced almonds
  • 1 egg
  • 4 teaspoons flour

 

Method

Preheat the oven to 180º C. Place flour, egg and almonds each in separate shallow bowls. Press the top side of each salmon fillet in the flour, followed by the egg. Then press the almonds onto the salmon. Set the salmon aside and repeat for the other fillets. Over medium heat, heat the oil in a large pan. Place the almond side of each salmon fillet down and cook until the nuts are browned. Flip and cook for another minute. Remove from pan and place on a baking tray lined with baking paper. Finish in oven for about 15 minutes or until its done to your liking. Serve with baked sweet potato and a large leafy salad or steamed greens.
