Apple Cider Scones

Apple Cider Scones – what a fun idea! Enjoy these with your own homemade strawberry ‘jam’ and whipped cream for a delightful afternoon tea with friends.

Serves: 10

Time: 45 minutes

Ingredients

  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1/4 cup white sugar
  • 1/2 cup  thick cream
  • 1/2 cup apple cider
  • 2 tablespoons milk
  • 100g strawberries
  • 1/3 cup apple cider (for strawberries)

Method

Place the flour, baking powder, sugar, cream, apple cider and milk into a bowl and stir until combined. Pour onto a floured surface and knead until a dough forms.

Press out using your fingers until the dough is 2cm thick then use a 3cm cookie cutter and to cut scones from the dough before placing on an oven tray and baking for 30 minutes, until cooked through and golden brown. Meanwhile, cut the strawberries into pieces and place in a saucepan with the cider; heat until the strawberries start to break down and the cider reduces. Serve scones with strawberry ‘jam’ and whipped cream.
