Whether you enjoy our Apple Pie Scones for morning or afternoon tea, it doesn’t matter. They taste delicious any time of the day, especially with a cuppa.

Ingredients
- 1 medium apple
- 1 large egg
- 1/4 cup unsweetened apple sauce
- 1 teaspoon lemon juice
- 1 tablespoon sugar
- 2 cups plain flour
- 1/2 teaspoon salt
- 2 tsp baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 5 tablespoons cold unsalted butter
Cinnamon glaze
- 1/2 cup icing sugar
- 1/2 teaspoon cinnamon
- 2 teaspoon water
Method
Preheat the oven to 200°C.
Wash the apple and grate it into a medium-sized bowl. Add the egg, apple sauce, lemon juice, sugar, and whisk together.
In a separate large bowl, stir together the flour, salt, baking powder, cinnamon, and ginger. Next, add the butter and work it into the flour. Pour the bowl containing the apple mixture into the bowl with the flour mixture. Stir just until a dough forms.
Place the dough onto a lightly floured surface and shape into a disc about 18cm wide and 3cm thick, then cut the disc into eight wedges. Line a baking tray with baking paper and place the wedges on top. Bake the scones for 18–20 minutes until golden brown.
While the scones are baking, make the glaze by stirring the icing sugar, cinnamon and water in a small bowl, until a thick paste forms.
Remove scones from the oven and allow the scones to cool completely. Drizzle over the glaze and serve.
