Asian-Style Grilled Fish

Here’s a foolproof recipe for an easy Asian-inspired fish that takes almost no time in the oven. We’ve really pared back the ingredients in this recipe to make it as easy as possible for you, but the combination of these six simple flavours truly makes for a mouth-watering dish!

Serves: 2

Ingredients

  • 1 tablespoon soy sauce
  • 30g sugar
  • 1 tablespoon minced garlic
  • 1/2 tablespoon lime juice
  • dash of ground ginger
  • 2 fish fillets, fresh or frozen (if frozen, defrost first)

 

Method
Combine the soy sauce, sugar, garlic, lime juice and ginger in a wide, shallow baking pan that will hold both fish fillets side by side.

Add the fish fillets and allow to sit for a minute or so, then turn it over so that it’s coated all over with the marinade. Set aside for about 20 minutes.

Slide the pan into the oven on the rack closest to heat, and grill the fish for five minutes.

Turn the pan around (back to front), and grill for five more minutes. You may choose to turn the fish over so that both sides are grilled evenly. If you find the juices in the pan begin to dry out, add a little water to prevent burning.

When ready, the fish should appear opaque and flaky.

Serve alongside your favourite Asian greens with the remaining sauce from the pan spooned over the top.
