Whoever said that chicken nuggets are bad for you hasn’t had our Baked Cheesy Chicken Nuggets. With real chicken, herbs and cheese, they’re way better than any fast-food variety.

Ingredients
- 3/4 cup flour
- 3 eggs
- 2 tablespoons lemon juice
- 1 cup fine breadcrumbs
- 1/2 cup grated parmesan
- 1 tablespoon garlic powder
- 1/2 tablespoon lemon zest
- salt and pepper, to taste
- 600g chicken tenders
- olive oil cooking spray
Method
Preheat oven to 220°C. In a bowl, mix the egg and the lemon juice. In a separate bowl, combine the breadcrumbs, parmesan, garlic powder, lemon zest, salt and pepper. Coat the chicken tenders in flour and shake off any excess. Then soak in the egg and lemon juice mixture, coat with breadcrumb mixture, turning until evenly coated. Lay chicken tenders flat on a baking sheet lined with aluminium foil and sprayed with olive oil. Spray tenders with olive oil and bake for 25 minutes until brown. Serve and enjoy and enjoy with a salad
