With just a few minutes of preparation you can pop today’s Baked Parmesan Chicken in the oven and in 45 minutes you’ll have a tasty dinner ready to serve your family or friends. Or halve the ingredients for a scrumptious meal for two.

Ingredients
- 4 skinless boneless chicken breasts, trimmed
- 1/2 cup Parmesan cheese, grated (Fresh is better but not essential)
- 2 teaspoons paprika
- 1/4 cup plain flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 2 eggs, beaten
- 50g butter, melted
Method
Preheat oven to 200oC. Prepare two, medium-sized bowls. Whisk two eggs in the first bowl. Combine the flour, Parmesan, paprika, garlic powder, salt and pepper in the second bowl. Place a wire rack on a large baking tray, brushing the rack with some oil. Dip chicken in the egg mixture, then follow with the Parmesan mixture. Take care to evenly coat the entire piece of chicken.
Place chicken onto the prepared baking tray and pour the melted butter evenly over all of the chicken.
Bake in the preheated oven for about 40–45 minutes, until cooked through.
TIP: You can finish the chicken off in the top broiler for a few minutes to get them nice and browned on top.
