After a delicious but healthy dessert? Well, our Roasted Pears with Caramel Sauce may be the answer. In fact, it makes for the perfect for breakfast too – just add homemade muesli.
Serves: Four

Time: 50 minutes

Ingredients

  • 2 tablespoons butter
  • 1/4 cup packed dark brown sugar
  • 4 pears, halved, cored and peeled
  • 1/2 cup thick Greek yoghurt
  • 1/4 cup coarsely chopped toasted almonds

Method

Adjust your oven rack to sit in centre position in your oven and preheat it to 200’C. Place butter in a baking pan and set in the oven until it melts. Remove pan from the oven and sprinkle sugar over the butter, then place pears, cut side down. Bake for about 30 minutes.

Remove pan from oven, turn pears over and baste with pan sauce. Return to oven and bake for another 10 minutes. Leave to cool slightly and then transfer pears to serving bowls. Top each with dollop of yoghurt, drizzle with caramel sauce from pan, and sprinkle with nuts to serve.
