A BLAT is similar to a BLT but with the addition of avocado. Our BLAT Salad combines all the same delicious ingredients with each other but there is no need for bread or a roll.
Serves: Two
Time: 10 minutes
Ingredients
- 6 slices bacon, chopped
- 1 tablespoon red wine vinegar
- 4 handfuls lettuce leaves
- 1 avocado
- 1/2 punnet of cherry tomatoes
- extra virgin olive oil
Method
Heat olive oil in a frying pan and cook bacon on a medium high heat until crispy. Mix the vinegar with three tablespoons extra virgin olive oil in a large bowl and season to taste. Coat the lettuce leaves with the dressing. Sprinkle over chunks of avocado, tomatoes and bacon.
