Blender Banana Muffins

You have to love an all-in-one recipe and this one is so simple. It’s a great way to use up those overripe bananas and it’s made with oil and only two eggs, so it’s cheap to make, but so delicious. The one rule for muffins is don’t overmix.

Time: 30 minutes

Serves: Makes 12 large muffins

Ingredients:

1/2 cup oil (I use light olive oil)

1 cup sugar

3 ripe bananas

2 eggs

3 tablespoons natural yoghurt or sour cream

1 teaspoon bicarbonate of soda

2 cups plain flour

1 teaspoon cinnamon

2 tablespoons crumbed/finely chopped walnuts

Method:

In a blender or food processor:

Whizz oil and sugar together.

Add eggs and blend.

Add bananas and blend.

Dissolve bicarb in yoghurt and drizzle into blender.

Sift flour and cinnamon into a mixing bowl.

Mix through walnuts.

Pour over blended ingredients and stir until just combined.

Spoon into a lined muffin tray and bake for 20 minutes at 200oC.
