This Cheesy Broccoli Penne Pasta is a quick and healthy dish for a midweek meal. The best part is that broccoli is in season, so it’s affordable. And the Parmesan gives it a delectable bite!

Ingredients
- 2 cups penne pasta
- 2 cups broccoli florets
- 2 tablespoons Parmesan cheese
- 2 teaspoons olive oil
- 2 teaspoons minced garlic
- black pepper, to taste
Method
Fill a medium-sized pot with water and bring to the boil. Add the pasta and cook until it’s firm to the bite, then drain and toss with a little olive oil.
While the pasta is cooking, bring water to a boil in a small pot fitted with a steamer. Add the broccoli, cover and steam for about 7–10 minutes. In a large bowl, combine the cooked pasta and broccoli.
Toss with Parmesan cheese, olive oil and garlic. Season with pepper to your taste. Serve immediately with crusty buttery bread – and perhaps even a glass of white wine!
