We think our recipe for Chocolate Hedgehog is without a doubt the best, but why not try it for yourself? It’s a great slice to keep refrigerated and snack on during the week when you get the 3pm stomach grumbles.

Ingredients
- 175g butter
- 2/3 cups caster sugar
- 4 tablespoon cocoa powder
- 2 tablespoon desiccated coconut
- 1 egg, lightly beaten
- 1/2 cups pistachios, shelled
- 250g milk coffee biscuits, broken into pieces
Chocolate topping
- 250g dark cooking chocolate
- 50g butter
Method
In a saucepan, melt the butter, sugar and cocoa over medium heat for three minutes and remove from heat. Add coconut, egg, pistachios and biscuits and combine. Press mixture into a baking paper lined 28cm x 18cm slab pan. Chill for one hour. Melt butter and chocolate over simmering water. Spread over slice and place in the fridge to set for 20 minutes.
