Chunky Chickpea Mash

Fibre-rich and heart-healthy, our Chunky Chickpea Mash goes well with grilled or roast meats. Just add a side salad or some sautéed greens for a delicious square meal.

Time: 10 minutes

Ingredients

  • 1 can chickpeas
  • 1/4 cup mayonnaise
  • 1 1/2 stalk celery, diced
  • 1/2 red onion, finely diced
  • 1 garlic clove, minced
  • 1/2 bunch flat-leaf parsley, chopped
  • salt and pepper, to taste


Method

In a bowl, roughly mash chickpeas with a fork. Add the mayonnaise, celery, onion, garlic and parsley. Stir until well mixed. Season with salt and pepper, and serve.
