It seems as if every bakery in Australia claims to have the best vanilla slice. Today, we share the secret to making your gooey custard creation the finest in the nation.
Ingredients
- 2 sheets puff pastry
- 1/2 cup caster sugar
- 1/2 cup custard powder
- 1 1/2 cups cream
- 2 cups milk
- 1 teaspoon vanilla essence
Icing:
- 2 cups icing sugar
- 1 teaspoon butter
- 1 teaspoon vanilla essence
- hot water
Method
Preheat oven to at 220 degrees C. Place pastry on a lined oven tray, prick with a fork and bake for 10 to 15 minutes.
In a saucepan, combine sugar, custard powder and cream and stir over medium heat until it starts to thicken. Add milk, half a cup at a time, and whisk until the custard becomes thick.
To make the icing, place icing sugar, butter and vanilla essence in a bowl and add enough hot water to achieve a medium level of texture. Let all components cool and then line the bottom of a 22cm square tin with pastry, followed by the custard, remaining pastry and then icing. Refrigerate for a few hours before serving.
Serving suggestion: you can substitute the icing with a sprinkling of icing sugar.
