This Coconut Granita will keep you cool on a hot day. The recipe is super simple, but does require a couple of hours to prepare before you can indulge.

Ingredients
- 400g can coconut milk
- 1/4 cup sugar
- 1/4 cup water
- 1/2 lime, juiced
- chocolate sauce, to serve
Method
In a shallow dish, pour the coconut milk. In a separate small microwave-safe dish, combine the sugar and water. Microwave until the water simmers and you can stir to dissolve the sugar. Let cool slightly and then add to the coconut milk and stir in lime juice. Place the dish in the freezer, and scrape every 30 minutes for two hours. Serve with chocolate sauce.
