Ingredients
- 2 tablespoons butter
- 1 onion
- 1 tablespoon minced ginger
- 1 clove garlic, crushed
- 1 litre vegetable stock
- 500g spinach
- 1/2 teaspoon ground nutmeg
- 30ml double cream
- 2 tablespoons freshly squeezed lemon juice
- salt and pepper, to season
Method
Heat the butter in a large pan and sauté the onion over medium heat for 10 minutes, or until soft. Add the ginger and garlic and sauté for about four minutes. Add the stock and bring to a boil, before turning down to a gentle simmer. Simmer for 10 minutes then add the spinach and nutmeg. Continue to cook until spinach wilts then carefully puree the soup in a food processor. Return the soup to pan and stir in cream whilst heating gently. Add the lemon juice and season with salt and pepper before serving.
