Croque Madame

Croque Madame is a classic – and delicious – French-inspired sandwich that’s filled with ham and gruyere cheese, pan-fried and then served with a fried egg on top. Enjoy with a green leafy salad.

Serves: One

Time: 20 minutes

Ingredients:

  • 2 eggs
  • 1 tablespoon milk
  • 1 tablespoon butter, softened
  • 2 slices white sourdough bread
  • 1/2 teaspoon Dijon mustard
  • 2 slices gruyere cheese
  • 1 slice leg ham
  • 1 teaspoon olive oil

Method:

Into a bowl, crack one egg, add the milk and beat lightly. Season with salt and pepper, and set aside.

Butter the bread and then spread with mustard. Add the cheese and ham to one slice and then top with the second slice.

In a frypan over a medium heat, heat the oil and butter and while the butter is melting, dip the sandwich into the egg and milk mixture, coating both sides. When the butter in the pan is sizzling, add the sandwich and cook for 90 seconds on each side. Remove when the bread is lightly golden. Add the remaining egg to the pan and fry until cooked to your liking.

Serve sandwich with fried egg on top and a green leafy salad.
