Crunchy Country Coleslaw

You don’t have to be in the country or have a barbie to enjoy our Crunchy Country Coleslaw. You could pair it with grilled meat or fish, or use it to add ‘oomph’ to your sandwiches.

Time: 15 minutes

Ingredients

  • 1 cup mayonnaise
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 6 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped green capsicum


Method

In a large bowl, add the mayonnaise, lemon juice, sugar and salt, and mix well. Add the cabbage, carrot and capsicum and toss to coat. Cover and store in fridge until ready to serve.
