If you are hosting a party and need some delicious finger food you cannot go past these Egg and Mayo finger sandwiches. Light and tasty your guests won’t be able to stop at just one.
Serves: Four to six
Time: 15 minutes
Ingredients
- 4 eggs, hard boiled and peeled
- 4 tablespoons low fat mayonnaise
- 12 slices wholegrain bread
- 100g smoked salmon, sliced
- 1 medium-sized Lebanese cucumber, peeled and thinly sliced
- 1/4 Spanish onion, peeled and thinly sliced
- pepper, to taste
Method
Place eggs into a bowl, add mayonnaise and pepper, and mash with a fork. Place four slices of bread onto a clean surface and top with salmon, cucumber and onion. Top with another slice of bread and spread over the egg mixture. Top with the remaining bread slices. Cut each sandwich into three fingers and serve.
