Fluffy Banana Pancakes

If you believe any day is a good day for pancakes, then try these delicious Fluffy Banana Pancakes.

Serves: Four

Time: 40 minutes

Ingredients

    • 2 cups plain flour
    • 1/4 cup brown sugar
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • 1teaspoon salt
    • 2 bananas, mashed
    • 2 eggs
    • 1 1/2 cups milk
    • 1teaspoon vanilla essence
    • 2 bananas, sliced
    • butter, for cooking and serving
    • maple syrup, for serving

 

Method

In a medium bowl, add the flour, brown sugar, baking powder, soda and salt, and stir well.

In a separate bowl, mix together the mashed bananas, eggs, milk and vanilla essence.

Add the flour mixture into the wet mix, and gently stir until just combined. Let the mixture sit for 10 minutes.

Next, melt a small amount of butter in a frypan over medium heat. Ladle the batter into the pan. As soon as the batter is in the pan, evenly place three banana slices on top. Once the pancake starts to bubble, flip over the pancake. Cook until it is browned on both sides and cooked through. Repeat with remaining batter, and keep cooked pancakes warm by wrapping in foil.

Serve pancakes hot with butter and syrup.
