Light and fluffy, our Pikelets make a perfect sweet treat for a morning or afternoon snack. Serve with butter, jam and cream.

Ingredients
- 1 cup self-raising flour
- 1/2 teaspoon bicarb soda
- 2/3 cup milk
- 2 tablespoons caster sugar
- 1 large egg
- 1 tablespoon butter, melted
- extra butter, to grease pan
Method
Sift flour, bicarb soda and sugar together into a large bowl. In a separate bowl, beat the milk and egg until combined. Pour milk and egg mixture into the dry mixture. Gradually incorporate the flour into the milk mixture, whisking until a smooth batter forms. Mix in melted butter. Lightly grease pan with butter and heat over medium heat. Drop tablespoons of the mixture into the frypan. Cook until several bubbles appear on the surface, about one minute. Turn pikelets over and cook until golden brown. Remove cooked pikelets from pan and repeat with remaining batter, lightly greasing pan between each batch. Serve hot or at room temperature.
