Super healthy and kind on the hip pocket, this Warm Beef Salad is made with only four simple ingredients. It’s a delicious and versatile dish that pairs nicely with rice or warmed roti, or just enjoyed alone.
With minced beef and only four ingredients, our Warm Beef Salad is kind on the hip pocket, and makes for a healthy meal with the addition of baby spinach leaves and tinned chickpeas.
Serves: 2
Ingredients
- 450g minced beef
- 400g canned chickpeas
- 4 handfuls baby spinach
- 1 lemon, juiced
Method
Heat some of the olive oil in a fry pan and cook the beef on a medium heat until browned.
Drain and rinse the chickpeas, then add them to the pan, stirring to coat with the oil. Cook for another five minutes until heated through. Season with salt and pepper, to taste.
To serve, divide the spinach into two bowls and spoon the beef mixture over the top.
Drizzle with lemon juice and serve.
Tip: Add an extra serve of veggies to your day by garnishing the dish with some freshly grated carrot.
