Ginger Pudding Delight

Our Ginger Pudding Delight oozes utter moistness with intense sticky goodness that bound to have mouths watering, especially with a dollop of cream.

Serves: Four

Time: 40 minutes

Ingredients

  • 100g unsalted butter
  • 2 tablespoons fresh ginger, finely grated
  • 200g brown sugar
  • 2 eggs
  • 100g self raising flour

Method

In a saucepan, melt the butter. Once melted, remove from the heat and add ginger and half the brown sugar. Stir and then add the eggs one by one, stirring well after adding each. Gently mix in the flour until just combined.

Divide cake mixture between four ramekins. Mix the remaining half of the brown sugar with one cup of boiling water. Pour over the cake mixture. Cover the ramekins loosely with a piece of foil and bake for 25 minutes. Remove the foil and bake or put under a grill for another five minutes. Serve hot with ice-cream or cream.
