If you’re after a classic dessert that’s sticky, sweet and tasty, then this Golden Butterscotch Pudding is just the ticket.

Ingredients
- 1 1/4 cups self-raising flour
- 3/4 cup brown sugar
- 100g butter, melted
- 1 egg
- 125ml milk
- 4 tablespoons golden syrup
- 1 tablespoon cornflour
- 375ml boiling water
- double cream or ice cream, to serve
Method
Preheat oven to 180°C. Grease a 1.5 litre ovenproof dish.
In a large bowl, mix together the self-raising flour and 1/4 cup of brown sugar. Add in the melted butter, egg, milk and half the golden syrup. Mix well and spoon into your prepared dish.
Combine the cornflour and remaining brown sugar, then sprinkle over the pudding mixture.
Dissolve the remaining golden syrup in the boiling water and pour mixture over the top of the pudding.
Bake for 40-45 minutes or until a skewer inserted into the centre comes out clean.
Best served with cream or ice cream.
