The Green Mango Salad recipe from Clean Living Quick and Easy by Luke Hines and Scott Gooding is a clean, healthy Asian-inspired meal. It only takes around 10 minutes to make and makes a great meal to impress friends and family.

Ingredients
- 2 teaspoons shrimp paste
- 1 green mango, peeled and flesh julienned
- 1/2 red onion, thinly sliced
- 8 cherry tomatoes, quartered
- 1 long green chilli, deseeded and finely chopped
- 1 birdseye chilli, finely chopped
- 1/2 lemon, juiced
- 1/4 bunch coriander, leaves picked
Method
Sauté the shrimp paste in a small frying pan over medium heat for one minute. Place the mango, onion, tomato, chillies, lemon juice and shrimp paste in a bowl and gently toss to mix well. Scatter the coriander leaves on top and serve.
