Hearty Prawn Gumbo

This traditional Creole stew is the ultimate comfort food. If you’ve never tried gumbo, this simple recipe is the perfect excuse. It’s a slimline version of the authentic dish – with the same rich flavours and texture

Serves: 2

Ingredients

    • 1 tablespoon olive oil
    • 1 1/2 tablespoons flour
    • 1/2 cup chopped capsicum (red or green)
    • 1/2 cup chopped celery
    • 1/2 cup chopped green beans
    • 1/2 cup chopped tomato
    • 2 cups chicken stock
    • 6 prawns (frozen)
    • salt and pepper, to taste

Method
In a deep saucepan, whisk oil and flour together and completely blended. Heat over a low to medium flame, stirring constantly for three minutes.

Add vegetables to the saucepan and mix well. Next, gradually add chicken stock and bring to the boil. Reduce heat and simmer for 10 minutes.

Finally, add the frozen prawns and cook for another five minutes until heated through.

Season to taste and serve immediately with crusty sourdough or warmed up tortillas.
