Honey Snowballs

A biscuit is the ideal accompaniment to an afternoon cuppa, but why not skip the shop-bought kind and make our Honey Snowballs instead? You’ll have enough to last you for weeks.

Serves: 24 balls

Time:  20 minutes

Ingredients

  • 1 cup butter
  • 1/4 cup honey
  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoon vanilla
  • 1/4 cup chopped nuts
  • 1/4 cup icing sugar


Method

Preheat your oven to 180°C and grease a baking tray (you may need two trays, depending on the size of your oven).

In a bowl, cream the butter and honey together and then sift in the flour and salt. Add the vanilla and nuts and use your hands to combine the mixture.

Shape into balls, place on the baking tray(s) and flatten slightly. Make sure there is enough space between each ball, as they will expand.

Bake for 12 minutes. Once done, allow to cool, and then dust with icing sugar.
