Lemon Brownie

Our Lemon Brownie is a special treat that’s easy to make. It’s perfect to serve to family and friends over afternoon tea.

Ingredients

Brownie

  • 1/2 cup unsalted butter, softened
  • 3/4 cup flour
  • 3/4 cup white sugar
  • 1/4 teaspoon sea salt
  • 2 eggs, large
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice

 

Lemon glaze

  • 4 tablespoons lemon juice
  • 8 teaspoons lemon zest
  • 1 cup icing sugar


Method

Preheat the oven to 180°C. Grease a 20cm x 20cm baking dish and set aside. In a mixer or food processor, beat the flour, sugar, salt and butter until combined. In a separate bowl, whisk together the eggs, lemon zest and lemon juice. Pour the egg and lemon mix into the flour mixture and beat for two minutes at a medium speed until smooth and creamy. Pour into baking dish and bake for 25 minutes or until golden around the edges. Allow to cool before glazing. For the glaze, filter the icing sugar and whisk with lemon juice and zest. Spread the glaze over the brownies and let it set. Cut into bars and serve.
