Ingredients
Crust
- 2 cups plain flour
- 1/2 cup icing sugar
- 1 cup margarine
Filling
- 4 eggs, beaten
- 2 cups sugar
- 1/3 cup lemon juice
- 1/4 cup plain flour
- 1/2 teaspoon baking powder
Method
Preheat oven to 180°C. Mix flour and sugar for crust, and cut in margarine. Press into a nine-by-13 inch baking pan and bake for 25 minutes. In a bowl, combine the filling ingredients, and pour onto the baked crust. Bake for another 25 minutes. Sprinkle with icing sugar and cut the slice into 24 pieces.
