This Low-Carb Breakfast Hash uses pumpkin, spinach, zucchini, broccoli and eggs to make a brekkie that’s packed with vitamins, nutrients and protein. And it tastes great!

Ingredients
- 1/2 cup pumpkin
- 30g butter
- 1 zucchini, finely diced
- 1/2 cup broccoli, cut into small florets
- 1 cup spinach
- 2 eggs
- 1/2 avocado, sliced
Method
Lightly steam the pumpkin. Heat butter in a large fry pan, add the pumpkin and cook until caramelised. Add the zucchini and broccoli, cooking for one to two minutes until slightly soft. Stir in the spinach.
Form two holes in the vegetable mixture, crack in the eggs and cook to your preference.
Transfer to a shallow bowl and top with the avocado.
