A nice, decadent treat, our Muesli Slice is the perfect pick-me-up with a cuppa for afternoon tea and especially when shared with friends.

Ingredients
Base
- 125g butter
- 1 3/4 cup flour
- 1/3 cup sugar
- 1/3 cup almond meal
- 1 egg
Filling
- 3/4 cup raspberry jam
Topping
- 3/4 cup toasted muesli
- 1/4 cup brown sugar
- 3/4 cup flour
- 50g butter, melted
Method
Preheat the oven to 180°C. In a food processor, place the butter, flour, sugar and almond meal and process until you get a fine consistency. Add the egg and pulse a few times until a dough forms. Roll out the mixture and place in a lined 20x30cm tin. Spread the jam over the base. Combine the muesli, sugar and flour in a bowl, then pour in the melted butter and mix well. Scatter over the top of the jam. Bake in the oven for 40 mins. Cut when cooled. Leftovers will keep refrigerated in an airtight container for up to two weeks.
