Our Apple, Carrot and Fennel Coleslaw is a fresh and healthy accompaniment to any meal. It only takes a few minutes to create and is full of flavour. It can be prepped and stored in the fridge until needed and goes well with chicken or fish.

Ingredients
- 2 carrots
- 1 apple
- 1/2 a medium fennel bulb
- 1 small red onion, peeled
- small handful of parsley leaves, finely chopped
- juice of 1 lemon
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- pepper, to taste
Method
Finely slice the carrots, apple, fennel and onion and place in a large bowl. In a small bowl, mix the lemon juice, mayonnaise and Dijon mustard to create a dressing. Add the dressing and parsley to the coleslaw and stir well. Serve straight away or store in fridge until your meal is ready.
