Shortbread always conjures up the taste of Christmas, and these nutty shortbread balls are a perfect treat to enjoy over the festive season or to give as a gift.
But that doesn’t mean you shouldn’t enjoy them any other time of the year. A simple shape change or the addition of some decoration and these nutty shortbread balls can be enjoyed any time.
Ingredients
- 2 cups plain flour
- 200g butter, chopped
- 1/2 teaspoon vanilla essence
- 1/3 cup caster sugar
- 2/3 cup almond meal
Method
Preheat the oven to 160°C and line a tray with baking paper.

Rub the butter into the flour, add the remaining ingredients and knead together. Roll into walnut sized balls. Then place on the baking tray and bake for 15 minutes.
Note: For Easter, use scissors to chop two ‘v’s into the top of the ball (to form ears) and poke holes for eyes and a nose to form a face – voila Easter bunnies!
