Orange and Ricotta Crepes

Light and delicious, these Orange and Ricotta Crepes with honey sauce are simply irresistible and a great way to show off your culinary talents at your next special dinner.

Serves: 4

Time: 35 minutes

Ingredients

  • 180g self-raising flour
  • 250g low-fat milk
  • 5g sugar
  • 1 egg
  • 250g low-fat ricotta cheese
  • 2 medium oranges
  • 20g sultanas
  • 15g honey

Method

Whisk self-raising flour , milk, sugar and egg until well combined. Set aside in fridge for 20 minutes. Using a small non-stick pan over medium heat, grease lightly and place about 1/4 cup of mixture into pan. Cook one side until bubbles show and flip over and cook other side for approximately one minute. Repeat with the remainder of the mixture then place on plate to cool slightly.

Squeeze juice from oranges and cut up pulp finely, place in saucepan over medium heat and add honey. Simmer sauce over low heat until thickened slightly. Set aside. Mix the ricotta with the sultanas and fill each crepe with the mixture. Roll up and serve drizzled with orange sauce. Serve immediately.

  1. Your picture of folded crepes could not be made from using a 1/4 cup of batter per crepe. You would need over a 1/3 of a cup, perhaps a little more depending upon the size of crepe you want , using a spreader tool
