Pear and Ginger Muffins

Serves: 12 muffins

Time: 35 minutes

Ingredients

  • 1 3/4 cups flour
  • 3/4 cup packed brown sugar, plus 6 teaspoons extra
  • 2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 2/3 cup sour cream or thick natural yoghurt
  • 1/2 cup melted butter or coconut oil
  • 2 large eggs
  • 1 1/2 cups peeled and chopped pears


Method

Preheat oven to 200°C and prepare a muffin tray by lining 12 holes with paper muffin cups.

In a large bowl, add the flour, 3/4 cup of brown sugar, baking power and ground ginger, and whisk until well combined.

In a separate medium bowl, whisk the sour cream/yoghurt, butter/oil, and eggs. Once well combined, fold in the dry ingredients. Then add the pear and stir.

Spoon the batter evenly between the muffin cups. Sprinkle each muffin with a half teaspoon of brown sugar, and then bake for 20 minutes. Leave to cool on a wire rack before enjoying.
