Quick Margherita Pizza

Sometimes you just can’t beat a fresh Margherita Pizza for dinner. Our homemade version is not only hits the spot but is also so easy to make with cheap and tasty ingredients.

Serves: One

Time: 25 minutes

Ingredients

  • 1 ready-made pizza base
  • 2 very ripe roma tomatoes
  • handful fresh basil leaves
  • 1 garlic clove, crushed
  • 1 tablespoon tomato pasta sauce
  • 1 tablespoon olive oil
  • 50g fresh mozzarella cheese, grated


Method

Heat the oven to 200°C.

Roughly chop the tomatoes and puree in a food processor with some of the basil leaves. Stir in the garlic, tomato pasta sauce and one teaspoon of olive oil. Season well.

Put the pizza base on an oiled tray and drizzle with olive oil. Spread the tomato pizza sauce on the base with a spoon, and scatter the cheese over the top. Drizzle with more olive oil.

Bake the pizza for 10 –15 minutes. Before serving, scatter over the remaining basil leaves.
