Asian-inspired Baked Salmon

Our Baked Salmon is a great dish to increase your omega 3 intake. With Asian flavours your tastebuds will enjoy this dish. 

Serves: Two

Time: 90 minutes 

Ingredients

  • 1/2 cup pineapple juice
  • 2 garlic cloves, minced
  • 1 teaspoon soy sauce
  • 1/4 teaspoon ground ginger
  • 2 salmon fillets
  • 1/4 teaspoon toasted sesame oil
  • 1 cup diced pineapple


Method

In a small bowl, mix the pineapple juice, garlic, soy sauce and ginger. Arrange the salmon fillets in a small baking dish and pour over the pineapple juice mixture. Put in the refrigerator and marinate for one hour. Preheat the oven to 190°C. Lightly coat two squares of aluminium foil with cooking spray. Place the marinated salmon fillets on the foil. Drizzle each with 1/8 teaspoon sesame oil. Sprinkle with pepper and top each with 1/2 cup diced pineapple. Wrap the foil around the salmon, folding the edges down to seal. Bake for 10–12 minutes, or until just cooked, with the centre a touch pink. Serve immediately with steamed rice and greens.
