Bacon and Avocado Salad

Our Bacon and Avocado Salad proves that greens don’t have to be boring. The bacon, needless to say, is full of flavour, and the avocado will give you a satisfying creamy texture.

Serves: One

Time: 15 minutes

Ingredients

  • 2 bacon slices
  • 80g green beans, topped, tailed and halved
  • 80g baby spinach leaves
  • 1 French shallot, finely sliced
  • 1/2 small avocado

 

Dressing

  • 1 small garlic clove, crushed
  • 1/2 tablespoons olive oil
  • 1/2 tablespoons balsamic vinegar


Method

Preheat grill. Put the bacon on a tray and grill on both sides until crisp. Leave to cool and then break into small pieces. Bring a saucepan of water to boil and cook the beans for four minutes. Drain and run under cold water for a few seconds. Put spinach in a serving bowl and add beans, bacon and shallots. Cut the avocado into cubes and add to salad. To make the dressing, in a small bowl whisk together all the ingredients. Drizzle the dressing over the salad and toss well to coat. Season to taste, and serve.
