Cheese and Bacon Muffins

Savoury muffins are a great way to start the day, or to nibble on when hunger strikes. Have these Cheese and Bacon Muffins on standby for a mid-morning snack.

Ingredients:

  • 1 tablespoon + 120ml olive oil
  • 4 bacon rashers, finely chopped
  • 300g self-raising flour
  • 1 teaspoon baking powder
  • 2 tablespoons caster sugar
  • 100g grated cheese
  • 120ml milk
  • 120ml olive oil
  • 60ml sour cream
  • 2 eggs
  • salt and pepper to taste

Method

Preheat oven to 200°C and lightly grease a 12-muffin pan.

Heat the tablespoon of oil in a frying pan and cook bacon until crispy. Drain and cool.

Sift the flour and baking powder in a bowl, then add sugar, cheese and bacon.

In a jug, whisk together the milk, oil, sour cream, eggs and salt and pepper, then add to dry ingredients. Combine well.

Pour the mixture into the muffin pan and bake for 20-25 minutes. Serve straight from the oven or allow to cool and store in an airtight container.
