Having people over for dinner and devoid of inspiration about what to serve for dessert? Our delicious Chocolate Trifle is sure to be a winner!

Ingredients
- 4 eggs
- 250g of caster sugar
- 250g of plain flour
- 1 pinch of bi-carb soda
- 300g cooking chocolate
- 200g of sour cream
- 250g of mascarpone
- 200ml of thickened cream
- 3 mandarins
- 1 splash of Cointreau
Method
Cake mix:
Preheat oven to 200°C. Mix the cream with the eggs and sugar until it becomes light and fluffy. Sift flour and bi-carb into the egg mix and fold gently. Melt the chocolate and pour into mixture with the sour cream and mix until combined. Once combined, pour into a cake tin and bake in oven for 45 minutes.
Trifle:
Whip the thickened cream until it become stiff then fold in mascarpone and segmented mandarins. Once the cake mixture has cooled, cut into rounds to fit in your trifle glasses. Sprinkle with Cointreau, then build alternate layers of cream and cake until the glass is full.
Place trifle in fridge for at least 2 hours (overnight is best). Garnish with grated chocolate and orange segment.
