Date and Coconut Slice

Our recipe for Date and Coconut Slice is the perfect, guilt-free snack for satisfying a sweet tooth – and making it is simple. The slice is full of fibre and stores well in the fridge or freezer.

Ingredients

  • 1 cup pitted dates
  • 1/2 cup boiling water
  • 1 teaspoon lemon juice
  • 1 cup wholemeal plain flour
  • 1 cup rolled oats
  • 1/4 cup desiccated coconut
  • 30g unsalted butter, chopped
  • 1/2 cup apple sauce

Method

Preheat the oven to 190°C and grease a 20cm square baking dish. In a small saucepan over medium heat, combine the dates and boiling water.

Stir until the water has been absorbed and the dates are smooth. Remove from the heat and stir through the lemon juice and apple sauce. Place the oats, flour, coconut and butter in a small bowl and mix well to combine. Add to the date mixture and combine.

Place mixture into the baking tray, pressing down firmly.

Bake for 25 minutes, remove from the oven and leave in the pan to cool. Slice, and keep in the refrigerator.
