Easy Chocolate Cake

Did we have you at easy? Well, our Easy Chocolate Cake is not only that, but also deliciously dark and rich. It’s essentially a baked chocolate mousse – yum!

Serves: 12 pieces

Time: 50 minutes

Ingredients

  • 2/3 cup unsalted butter, plus extra for greasing
  • 5 large eggs
  • pinch of salt
  • 450g dark chocolate, chopped
  • 1 teaspoon vanilla extract

Method

Preheat oven to 190°C. Line the bottom of a springform cake tin with baking paper and grease the sides.

Using an electric beater, beat the eggs with the salt in a bowl for about eight minutes until the eggs triple in volume.

In a saucepan over low heat, gently melt the chocolate and butter, and stir until smooth. Next, fold the chocolate mixture into the egg mixture, until well combined. Mix in the vanilla and pour the cake mix into the prepared tin.

Bake for 18 minutes. Cool for half an hour in tin before serving. Enjoy with fresh cream and strawberries.
