Our Easy Lamington Slice is so simple to prepare you’ll want to whip it up weekly. Best of all, it’s highly likely that you’ll already have the ingredients in your cupboard.

Ingredients
- 4 eggs
- 2 cups castor sugar
- 1 cup oil
- 1 teaspoon vanilla essence
- 3 cups sifted flour
- 1 tablespoon baking powder
- 1 cup milk
- 2 cups desiccated coconut
- 1/2 teaspoon salt
Coating
- 2 cups icing sugar
- 1/3 cup cocoa powder
- 3 tablespoons butter
- 1/2 cup hot milk
Method
Preheat the oven to 180°C. In a bowl, whisk the sugar and eggs until light and fluffy. Add the oil and vanilla essence and combine. Add the flour and baking powder to the mixture, alternating with the milk as you stir. Pour into a rectangular greased baking tin and bake for about 25 minutes. Allow to cool and cut into small squares (4cm x 4cm). In a small bowl, add the ingredient for the icing and stir well to combine. Roll each square into the icing until well covered and then roll in the coconut. Serve and enjoy!
