Ingredients
- 1/3 cup sugar
- 1 egg
- 2 ripe bananas, mashed
- 1 cup plus 2 tablespoons flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons cooking oil
Method
Preheat oven to 180°C and line eight holes in muffin tray. In a medium bowl, beat the egg and the sugar until well combined. Add the bananas and beat again. In a separate bowl, mix the flour, baking powder, baking soda and salt. Add to the banana mixture and whisk until smooth. Add the oil and mix again, until well combined. Fill prepared muffin tin and bake for 20 minutes. Cool in tray for five minutes, then turn out on wire rack. Enjoy warm or at room temperature.
