Fragrant Vegetable Curry

Want to eat more vegetables and less meat? The aromas (and tastes) of our Fragrant Vegetarian Curry are sure to convert any meat eaters in the house.

Serves: Four

Time: 25 minutes

Ingredients

  • 1 onion, sliced
  • 2 tablespoons curry paste
  • 1 carrot, diced
  • 1 small cauliflower, cut into florets
  • 1 tin chickpeas
  • 1 tin diced tomatoes
  • 1 tin of coconut milk
  • 1/2 cup frozen peas


Method

Place a saucepan over medium heat, add a splash of olive oil and gently sauté the onion until soft. Add the curry paste and stir until fragrant. Then mix in the carrot, cauliflower and chickpeas, coating the vegetables in the curry paste. Sauté for a minute before adding the tomatoes and coconut milk. Bring to the boil then turn down to a gentle simmer for 15 minutes. Finally, add the peas and cook for another five minutes before serving with rice.
