Our Healthy Chocolate Pudding is made with ripe avocados and bananas to create a delightfully creamy dessert that’s free of refined sugar.
And what a great way to use those nearing over-ripe avocados. Combined with rich cocoa powder and the sweetness of banana and dates, what’s not to like? You might want to add a scoop of sugar-free nut butter for a bit of protein. This pudding keeps well-stored in an airtight container in the refrigerator for up to three days.
Serves: Six
Time: 10 minutes, plus 2 hours for soaking and 2 hours for chilling
Ingredients
- 2 avocados, peeled and pitted
- 1 banana
- 1/2 cup unsweetened cocoa powder
- 1/2 cup pitted dates, soaked in water for a few hours and drained
- 1 teaspoon pure vanilla extract
Method
Using a food processor or blender, puree ingredients until smooth. You will need to scrape down the sides of your appliance and run a few times until the mixture is totally smooth and creamy. Refrigerate in a bowl, or individual serving bowls, for several hours before serving. Can be kept for up to three days.
