Cooking for one: Honey Dijon Pork Chops

Our Honey Dijon Pork Chops are a winner for when you are dining alone. Serve with a salad or steamed vegetables to make a complete, wholesome meal. The sauce also works well poured over a grilled pork fillet.

Serves: One, but can be easily multiplied for others

Time: 15 minutes

Ingredients

  • 1 boneless pork chop
  • 2 teaspoon honey
  • thinly sliced garlic
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • pepper, to taste


Method

In a small bowl, mix the honey, Dijon mustard and lemon juice. Rub pepper into pork chop. Spray pan with cooking spray and cook pork over a medium heat until brown. Add the honey mustard mixture and cook until caramelised. Serve with your choice of steamed vegetables or salad.
