Ingredients
- 1/2 cup butter
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 egg yolk
- 1 1/2 cups all-purpose flour
- 2/3 cup chopped almonds
- 1/2 cup raspberry jam
Method
Preheat oven to 180°C and grease two sheets of baking paper.
In a medium bowl, mix the butter and sugar. Add vanilla extract and egg yolk, mixing until fluffy. Stir in flour and chopped almonds. Measure out dough by the tablespoon, and roll into balls. Make an indentation in each cookie with your thumb and fill with jam using a teaspoon.
Bake for about 20 minutes or until golden brown.
Remove cookies from baking sheets to cool.
