Looking for an Aussie favourite that truly takes the cake? Then look no further than Betty’s Lovely Lamingtons. They’re simple to prepare, inexpensive and super tasty.
Makes: approximately 9 lamingtons
Ingredients
1 x 400g square golden sponge cake (bought from supermarket) and cut into nine squares
1 cup sugar
1/2 cup water
1 dessertspoon of cocoa
1 piece of butter (size of a walnut)
2 cups shredded coconut
Method
Bring all ingredients, except sponge and coconut, to the boil, then simmer for 10 minutes, watching continually and stirring when necessary.
Pour mixture into a large dish and place shredded coconut on a dinner plate. Using tongs, roll sponge squares in cocoa mixture and then in coconut. Leave to set, perhaps refrigerating for an hour if weather is warm.
Enjoy with an afternoon cup of tea.
