Who doesn’t love macaroni? This tasty dish makes a lovely lunch.
Ingredients
- 1/2 cup macaroni
- 1 tablespoon oil
- 1 onion, finely chopped
- 400g can crushed tomatoes
- 310g can red kidney beans
- 2 cloves garlic, crushed
- 400g mince (pork or beef)
- 2 teaspoons ground cumin
- 1/2 cup parsley, chopped
- 1 cup mozzarella cheese
Method
Cook the macaroni for 10 minutes then drain and set aside.
Heat the oil in a frying pan, and cook the onion for three minutes. Add the garlic and pork mince and cook for five minutes. Stir in the cumin and crushed tomatoes. Bring the mixture to the boil then reduce the heat and simmer for five minutes.
Stir in the kidney beans, macaroni and parsley. Spoon the mixture into an oven safe pot, sprinkle with the mozzarella and bake at 200°C for 15 minutes.
